So, menu planning for week one has started! I'm feeling so domestically content. I completed my menu plan on friday and shopped for it yesterday. It was not too difficult - but this week is definitely a test week. I'm worried some of the meals are too similar to one another, but we will see. One of the mom's I babysit for gave me some great tips to get started. I know lots of you menu plan - if you have helpful advice, comment below pretty please! (See my next post about what I learned this week)
Last night we had baked stuffed avocados - think twice baked potatoes or warm gourmet guacamole. It was delicious. I adapted it from many different recipes and then threw in my own ingredients.
I got the idea from this link and photo.
I changed it a bit though by scooping the avocado out. I mixed the avocado with 2 diced roma tomatoes, some diced onion, 1/4 cup black beans with jalapeno, diced green onion, feta cheese, squeeze of a lemon, dash of chilli powder, dash of cumin, dash of paprika. I scooped the mixture back into the skin and topped with pine nuts and cilantro. I baked them for 5 minutes at 400 degrees. We ate them by itself with a fork and dipped a couple tortilla chips. It also would have been good with a salad or rolled into a tortilla. :)
YUMMMM! It was savory, warm and very filling.

Sunday: Southwestern Cheese Panini to use up leftover veggies or eating out (adapted from recipe)
I'm really looking forward to these meals. It's definitely easing the headache of "what's for dinner" and making the weeks more fun. I'm already starting to plan for next week. I was thinking monthly menu planning was too daunting, but now I'm thinking it will be easier than expected. Woohoo - domestic bliss and growing up can be smooth with a little planning. :)
Now time to workout while baby B is taking her morning nap. I love blogilates! I usually string a few of Cassey's youtube workouts together for my daily exercise. They are killer and her enthusiasm makes them fun. After that- it's off to the park with baby B for swinging and lunch. I'm so happy the weather is starting to warm up a tad. I was getting cabin fever this winter staying inside with the babies each week.
