This week has still been hectic with errands and Jonny's new work schedule, but I did have time to create a menu plan! We've already had some delicious meals and I'm excited for the rest of the dinners.
Monday: Fend-for-self dinner because Jonny was closing. I was off late, too, so I ate black beans, salsa and tortilla chips. Not the best choice, I know. :p
Tuesday: Cheesy Spaghetti Squash Casserole ... adapted from this recipe.
Wednesday: Black Bean-Sweet Potato Burgers and Sweet Potato fries
Thursday: Vegetarian Thai Curry Udon
Friday: Leftovers (Jonny closes again)
Saturday: Flatbread Pizza
Sunday: Omelettes - to use up leftover veggies and cheese
The casserole and veggie burgers were wonderful. Jonny still isn't in love with spaghetti squash like I am, but I'll keep trying! Everyone including my parents loved the veggie burgers - I will definitely make them again and experiment with adding new ingredients.
So, Jonny and I are cutting out refined sugars and junk until my birthday - April 16th. But, I still have a sweet tooth. Thank goodness I found these delicious, creamy, healthy "ice cream" bars. You've got to try them! I liked them more than real ice cream bars - coconut heaven!!




i don't know if ill start loving squash, but ill keep eating it :). Thank you for all your hard work and preparation with all of this.
